As the name implies, J. Gilbert cooks their steaks over a mesquite fire grill. Other than that, it's a pretty typical steakhouse, albeit one that offers a little more variety in both size (compare the 4 oz. petite filet with a 24 oz. porterhouse) and non-beef menu items (the seafood selection is strong).
